Do you have a paging file? Are you using hibernation? Are you allowing memory dumps? Any of these can cause encrypted data to be written to your drive in plain text. It's all in the Truecrypt documentation (I assume that's what you're using).

Your best bet would be to avoid all this and either use full disk encryption, or even better, boot from a live cd, Linux being the OS of choice.
