Theoretically it is possible to recover your RAM memory for up to 2 minutes after you shut down your computer, but this has only done in a University laboratory, the chances of that happening are extremely ridiculous and the police is not usually making use of it, for a start because the average criminal is stupid enough not to use a live CD and not to use full disk encryption.

If you have a look at the news of people arrested for cybercrime, you will see that only %1 at most used some form of encryption, the rest were just low hanging fruit easy to pick up. Recovering your RAM would also be awfully expensive, maybe if you are a dangerous terrorist the police may consider that you are worth the trouble.

I would not worry about it too much really.

A new live CD with tor I know of is The (Amnesic) Incognito Live System:

https://amnesia.boum.org/

Notice that the website is SSL only (https) and you will get a digital certificate warning in your browser, this is normal and to be expected.

I myself use Sabayon, Sabayon is never advertised as an anonymous live DVD because it has many other features but when you boot Sabayon you get a choice that says "Anonymous Internet Browsing", and you get to surf the internet with tor through your browser. (around 3GB download)

And there is Privatix, but I never used it yet:
